Gluten-Free, Sugar-Free, Dairy-Free
This tropical inspired pudding is a guilt-free indulgnace. No sugar. No dairy. Just fruity goodness and the superfood chia! Chia seeds do not only contain antioxidants but are also loaded with fiber, protein, omega-3 fatty acids and vitamins.
1 can of light coconut milk
6 pitted dates
1 tsp honey
1/4 cup chia seeds
1 tsp vanilla essence
fresh mango or pineapple cubes
Add dates and coconut milk to a blender and blend until a smooth mixture. Add vanilla esssence and chia seeds and stir well. Allow to stand for about an hour or until the chia seeds have swelled and formed a jelly-like substance.
Take a tall glass and fill 1/4 with chopped fruit. Add 2/4 of chia mix. Layer fruit and chia according to height of glass and then top with fruit.
Enjoy this filling and energizing dessert, eat as much as you please!
